Pizza inspired by Dad and FK


So last night I decided to make homemade pizza. I was channeling Dad and his Collins Pizza (see the cool card above that one of our good friends made to hand out at his funeral) and a little of FK, a wonderful blogger who has regular pizza and wine night...see his Saturday night dinner at: http://biggerthanyourhead.net/2009/06/28/the-clerks-tale/


For the kids, it was the simple, crust, sauce (which i used smooth Schnucks spaghetti sauce b/c i didn't have any pizza sauce) and cheese (again, Schnucks, to the rescue, they have a new Italian blend of mozarella, provolone, parmesan, asiago, fontina and romano cheeses). I'm usually more of a purist (if i'm truly channelling Dad) and only have mozarella and a little provolone, but hey, this stuff was already shredded and ready to go!


For Chris and myself (is that grammatically correct?), I tried to re-create one of our favorites from Fire N Stone Pizza that has sadly closed....it's called the Cali. It's not traditional Collins Pizza but it is inspired by Dad who loved to make pizza for his family. Making pizza for your family and friends is DEFINITELY a great way to show your love!
Here's the basic recipe:

Mix up the crust mix and spread in pan and cook til lightly brown.

Spread HOMEMADE (we happened to have some left over from this past week) Pesto on the crust

Add crumbled Gorganzola cheese

Add Toasted Sliced Almonds

Add Sundried Tomatoes

Add Red Onions (i put a ton on my side of the pizza...it was rectangular shaped)

Cover w LOTS (that's where Dad was channelled in...b/c Chris typically doesn't like so much cheese) of the Schnucks Italian blend.


It turned out wonderful and i don't have pix b/c i didn't think of writing about this until it was all gone (ate more today for dinner and there's one little slice left ... it wouldn't look very good photographed now).




We drank a VERY CHEAP wine (only $8) with it and it was actually pretty good. It was San Telmo Cabernet Sauvignon 2003 Mendoza from Argentina and we bought it at the Baptist Liquor Store here in Gtown! see my friend Susie's take on the Baptist Liquor Store at: http://sweetiepetitti.blogspot.com/2009/03/bloggable-wine-guy.html


Anyways, it was a good night of pizza and wine. Kids weren't as impressed (they eat too much frozen pizza and have had their tastebuds damaged...BAD MOMMY!), but Chris was happy and so was I!

I originally wanted to write a deep, sad entry on my blog today b/c I'm truly very sad about having to go to a NINE year olds' funeral tomorrow, but I decided that I just need to keep focusing on the happy and good things in life ... my family, food and wine are a great start!

Birthday...starting my 42nd year in the journey

I usually write a long journal entry on my birthday (b/c up until this past fall when i started blogging, i had become rather irregular in my writing and the annual birthday entry had to catch up the past year's worth of living and outline where i wanted to "go" the coming year).


I may write more later, but I'm still kind of "weirded out" by the events over the past year...not sure I want to reflect on the past anymore.


This part of (one of the various entries out there) my horoscope is actually spookily accurate:

Celebration Plans:

I'm trying to decide what I want to do today...I don't know why on one's birthday you feel like you have to do special or favorite things? Why don't you do your favorite things EVERYDAY? Maybe this will be one of my goals in my 42nd year!?!?




I already ate my favorite breakfast: 2 sunny-side up eggs w toast


I am now blogging (one of my new favorite things).


I am also reflecting WAY back on previous birthdays....just found the Taco Mac menu from my 21st birthday when many of my special friends travelled ALL THE WAY to Atlanta to celebrate w me. I do like to reflect back on the overall great life I'm having....I'll do MORE of that too.






I also want to find some time to just read/browse my books and sift thru more life memorabilia (also found some ticket stubs from past concerts-U2 Popmart Tour 1997 and Hootie & the Blowfish 1996...hee hee).



I'm also hoping that Maggie will call and just laugh for me! It's one of my all-time favorite "noises"!




The rest of the day I plan on spending lots of time w my 2 favorite kids: Jack & Quinn!!











And tonight, I get to co-celebrate my birthday at the REDBIRDS GAME w my nephew Mac who has his FIRST birthday today! HOORAY!

Heart is Aching Again

I feel so messed up right now.....i'm still grieving the loss of Dad (and got really sad two days ago on Father's Day) and now I found out that a wonderful, special LITTLE child of nine "lost" her fight w cancer yesterday.



I have mentioned her on my blog before in this post. Just 3 months ago, this sweet little girl sat w me, her mom and another neighborhood friend as we (the adults) sipped wine and talked in a nearby restaurant. She was so mature and smart!



I'm just so shocked and feel completely terrible that her family is going through what my family went through a few months ago and she was just a child. I just cannot wrap my brain around or imagine losing a child. Losing my parent was extremely tough....this must be 100 MILLION times worse for them!



She did not even live a full decade....but WOW! did she ever have a great impact upon those she knew and many others who never met her. She was an incredibly brave and mature young girl. Here are some links to articles about her fight with cancer and her courage:

I feel a little paralyzed today...I want to "get back to normal" and live my life, but I kind of feel like I need to process this latest "setback". I know it's not MY SETBACK (it wasn't my child, but I feel very deeply for this family since I am friends with her mother and her brother plays w my son and her mother is also one of the most incredibly SWEETEST human beings i have ever met!), but I'm just so terribly depressed by this devilish disease, cancer. Why can't just the bad people get cancer? Why can't GOD get rid of cancer (see my rambling on this in a previous post)?!??!

I just want to curl up on the couch and become a zombie for a little while...but i can't really ignore my two beautiful children. And I DO FEEL BLESSED to have "relatively" healthy kids. I feel blessed and mad and many other feelings all at once right now.

Ah, the next best thing...write on my blog, zone out surfin the net and checking FB while the KIDS zombie out in front of the tv .... good ole SPONGBOB to the rescue!

At least i haven't completely lost my mind....only slightly.

Here's some information that was sent to the families at our school a little while ago:


Caroline Turns had a recurrence diagnosed 3 weeks ago that became inoperable due to complications of pneumonia and the size of the tumor. She passed due to the pressure on her heart and her inability to breathe. She was at home and at peace Thursday through Monday. She stopped breathing at sunrise on Monday and never suffered or had pain.

She is an angel in heaven. The Turns family appreciates all the love & support from the Dogwood family but is asking for prayers & privacy. The Turns have plenty of food at this time - thank you.

The memorial service will be 10:00 am Monday June 29th at Grace-St. Luke's Episcopal Church (1720 Peabody Ave Memphis, TN 38104). They are taking a trip to Hawaii to spread her ashes at Haleakala volcano and the ocean in Maui, Hawaii. This was a trip they had hoped to take with Caroline in August - she will be with them in spirit.Caroline's contagious smile & kind spirit will be greatly missed in our Dogwood family.

The Turns family request that in lieu of flowers a donation can be made in memory of Caroline to the Dogwood PTA. Address: 8945 Dogwood Road, Germantown, TN 38139 If you have any pictures of Caroline---please email them to elainewest@comcast.net to give a collection for the Turns.

A great fable to explain why I may think that the point of a commentary (i.e as in my last post: Boiling Blood) is "A", when another friend may think it is "B", another "C", and so on...

Boiling Blood

I don't know why I let comments that seem completely "off base" or "out of nowhere" bother me so much!??! It certainly isn't following my new path of "taming" the temper as I'm trying to train myself in some good techniques from His Holiness the Dalai Lama!!

I do understand that people "see" things differently from me and I actually like to hear different points of view from mine so that I can make sure I'm not just living in "la la land" thinking that the world will be more peaceful and happy some day. I do want to hear what conservatives say and sometimes I actually agree with them (regarding lazy people who don't really deserve any help--YES, i think some people are UNdeserving of help--THERE I ADMITTED IT!).

So here's what got my blood boiling tonight (and i HAD to write something about it, even tho i should be in bed):

I posted a link to an excellent commentary (at least it was excellent from my "way too liberal for the rest of the world" point of view) on FB and a comment from one of my actually quite intelligent friends just got me SO MAD!

SIDE NOTE: another blood boiling occurence JUST NOW (these seem to snowball when i get mad): The Flyer's website doesn't have a good "link" sharing option (only if you share via one of the social networking sites or if you e-mail a friend). So I e-mail the link to myself and that STUPID hotmail account ALWAYS thinks that e-mail FROM my hotmail account is "Junk". WHY?!?!? That is just really REALLY stupid! why would an e-mail FROM my own e-mail account address be Junk when sent to that very same address??? (perhaps b/c it was routed via the Flyer's site?)

BACK TO THE ORIGINAL BLOOD BOILING:

When I posted the link to the commentary, my opening comment was:
"do yourself a favor and take a moment to read this and really think about our world a bit."

In summary, for those who don't want to hit the link and read it, Tim Sampson (who writes "The Rant" weekly for the Memphis Flyer) talks about this cute little boy he sees every afternoon who makes him smile. Then he says he's tired of all the bad news in our world, and would just like to take the little boy around the world and ask all the bad guys, "Do you really want all this bad shit to happen to this innocent kid?"

Now I'm sure my friend came at it from a totally different point of view, but I just think his comment was wildly "OFF BASE". Now as I reflect on it, i'm not sure if it was "off base" or just "missing the point", but maybe i'm just splitting hairs here? I think he made his comment based upon the picture of the child, and then I remembered the reference to the child looking like a young Obama...however, I still think he's MISSING THE FREAKIN POINT!

His comment to my link to this commentary was (i literally cut n paste this from FB): "To which I reply: should we officially disciriminate against my two equally cute little boys because of the color of their skin? Because that's the law of this land today."

I replied: "if there weren't a picture of this kid, would you have made this comment? i'm sorry if this is what you got out of the story. i got out of it that ALL kids are growing up in a pretty crappy world and is this the world we want ALL kids to live in or should we change it?"

Now, please, dear friends, tell me if i'm a total nutcase. I know I'm a major "bleeding heart Liberal" (as my father fondly called me), but am I wrong on thinking that posting this link to this article might actually be somewhat of a "wake up call" to others that we urgently need to do something to make this world a better place for ALL kids?!?! Or at the minimum, get people thinking about the absolutely ridiculous way some people treat others?


I'm really needing some affirmation here!!!

At least I'm selecting a fairly neutral place to get up on my "high horse"... you know, the "high horse" my friends used to fondly try to talk me off of when I would drink a little too much, and decide to denounce the evils of the world LOUDLY and publicly (at various events or bars around Memphis) IN THE PAST (i'm way more in control these days!).

Well, at least, writing this out on the blog helped knock the temperature down a bit inside of me and i might be able to sleep now....

more on the search for sagacity

just want to post something new b/c that TWEET post was pretty annoying...

anyways, i'm on a big quest for sagacity (for more click here -->> ON THE ARROWS please). AND it's so much bigger than i ever thought and its really a life mission and i'm pretty overwhelmed. besides wanting to finding sagacity, i need to continue the path i'm on b/c chris and i created two little individuals and that's a huge task, mission, responsibility....whatever you want to call it, but their lives (and my role in it) can't be set aside. i'm a mom and wife FIRST and whatever else i want, has to come 2nd, 3rd, 4th etc...

i'm reading "Becoming Enlightened" by His Holiness the Dalai Lama (your welcome Amazon.com). it's giving me such a burst of thoughts and excitement! i don't know when and where and how to comment....i feel like i wouldn't be true to his teachings if i "bragged" about my connection with it....maybe another time.
